If I disconnect the battery and leave for over 15 minutes will the computer default back to factory settings and then re-learn and adjust thereafter for driving conditions, fuel and engine wear etc?

Will this also clear any fault codes or do they remain in the chip memory? or do you need VAG-COM to do this properly?

Easier way is to pull the ECU fuses in the fuse box. They are normally under a red cover with "motor" on the top. Disconnecting the battery will mean losing trip computer readings (if you have it) clock will need resetting, radio code, alarms etc etc.
Drive the car gently for the first few miles to give the ecu chance to relearn it's mixture setting and so on.
All codes will be erased but thats not to say they won't return if somethings amiss.

I did hear about this in another thread. Since my car battery was disconnected its been running very lumpy. If i pull the ecu fuse for 20 mins will this sort out my problem?
